Here is a delicious way to serve cauliflower and makes a welcome change from simply steaming or stir-frying. This recipe idea is also great if you’re looking to drop your carbohydrate intake and/or lose excess weight, but still want something to serve with your grilled fish!
1 medium cauliflower
1 medium red pepper – de-seeded, sliced and chopped
2 garlic cloves – thinly sliced
1 small red or white onion – thinly sliced
½ teaspoon of ground turmeric (or use cumin)
A thumbnail size of chopped root ginger
1 spoon of organic coconut butter for light sauting
A tablespoon of chopped fresh coriander
Sea salt and ground black pepper to taste
Process the cauliflower in a food processor until it somewhat resembles cooked rice. Then in a saucepan, lightly saute the garlic, red pepper and onion and then add the turmeric or cumin. Now add the cauliflower and cook gently over a low heat for 2-3 minutes. Place the cauliflower mixture into a bowl and stir in the lemon juice and ginger. Place the mixture in a bowl, and add the lemon juice, ginger and coriander. Season with salt and pepper before serving.
