Leafy green salad with goat’s cheese & fruit

This is a healthy and delicious combination of green leaves, fruits and cheese to help boost your intake of vitamins A, C and the B Complex, as well as minerals such as calcium, iron, and magnesium.

30g-50g of mixed lettuce, dark green salad leaves (watercress, spinach and rocket) and any fresh herbs
A handful of seedless grapes cut in half
2 fresh figs or kiwis, sliced
2-3 dried apricots cut lengthways into strips
40g goats cheese or Edam cheese, cut into cubes
A squeeze of fresh lemon or lime juice
A drizzle of extra virgin olive oil or hemp oil
Coarsely ground black pepper

Optional extras or alternatives to cheese:
Chopped organic turkey or chicken breast
Walnut halves

Gently toss all the ingredients together in a bowl. Top with free-range or organic chicken or turkey slices or strips, or a few walnut halves as extras or alternatives, and then finish with a squeeze of lemon or lime, olive oil (or hemp oil) and lots of black pepper! Enjoy!
